Raspberry Coconut Bars

 

I am a bit obsessed with plantains, there is no hiding that. But they are so versatile and perfect for a grain-free diet! Green or ripe, I will take them all and make something out of it;) 

I needed something quick that was healthy enough for a breakfast or snack but could also pass as a treat. These Raspberry Coconut Bars were the answer! No added sugar, great source of healthy carbs, fiber, and fats and added protein for an extra nutritious kick. They also fit many gut-healing diets and are AIP Paleo approved;) These bars have substance and they hold up nicely in a packed lunch or in your bag, I am making a batch right now for an upcoming road trip.

Don't like raspberries? No problem, trade them out for your favorite freeze-dried fruit or hold it all together for a basic energy bar. Get creative!

Raspberry Coconut Bars

Makes 8 Bars

2 large green plantains
1/4 cup coconut oil
1/4 cup coconut butter
1/4 tsp sea salt
4 tbsp grass-fed collagen
1 tsp vanilla extract
1/4 cup (+ 3 tbsp set aside)  shredded coconut
1 cup freeze-dried raspberries

Frosting:
2 tbsp coconut butter
3 tbsp coconut milk

1) Blend all bar ingredients except for the shredded coconut and raspberries until smooth
2) Fold in shredded coconut and spread into 8x8 pan lined with parchment paper
3) Gently press in remaining coconut and raspberries onto top of bars
4) Bake at 350  for 30 minutes
5) For frosting, melt butter in milk in small pan, drizzle on baked bars
6) Enjoy immediately or store in refrigerator!
